Ingredients
4 Garlic Cloves, minced
1/4 cup Chopped Fresh Cilantro, divided
1 1/2 Tbs Avocado Oil
1 1/2 Tbs Cajun Seasoning
4 Boneless Center-Cut Pork Chops (about 1½ pounds)
3 containers (4 ounces each) Peach and Mango Fruit Cups in coconut water
2 Roma Tomatoes, chopped
1 Red Bell Pepper, chopped
1/3 cup Chopped Red Onion
1 tsp Lime Zest
Directions

1. Prepare outdoor grill for direct grilling over medium-high heat. In small bowl, stir garlic, 2 tablespoons cilantro, oil, seasoning and ½ teaspoon kosher salt; rub over pork chops and let stand 15 minutes.

 

2. In large bowl, toss fruit cups, tomatoes, pepper, onion, lime zest and remaining 2 tablespoons cilantro. Makes about 3½ cups.

 

3. Place pork chops on hot grill rack; cover and cook 8 minutes or until grill marks appear and internal temperature reaches 145°, turning once. Serve pork chops topped with salsa.

 

Dietitian Tip: Add some fiber and B vitamins by serving these delicious pork chops alongside a whole grain such as farro, or a microwavable rice blend for a really easy side.
